Set on a historic cocoa estate owned by British chocolate manufacturer Hotel Chocolat, Boucan is an airy, all-day restaurant with mesmerising views over lush green forest to the soaring triangle of Petit Piton. The menus use cocoa and chocolate in many fascinating ways, from "cacao gazpacho" to confit of duck with white chocolate mashed potato. The approach is serious and the chance to discover wines that pair well with chocolate, such as the house Chateau Chocolat from Alentejano, Portugal, is revelatory.
