Frequented by the influencers and dignitaries that have shaped modern Italy and Europe throughout the centuries, Michelin-starred Del Cambio stands today as it long has – an ornate, grand hall in velvet and stucco work, albeit now bedecked in the artworks of contemporary auteurs. From the kitchen, chef Matteo Baronetto produces distinctive dishes like veal kidney and sea urchins or caramelised piglet with bitter roots in olive oil and parsley, to name but a few.
