Mathias Dahlgren closed his Michelin two-star restaurant Matsalen in the Grand Hôtel in 2017 and up popped this vegetarian eatery in its place. He was already beginning to use greens in his meals and now they take front and centre in arty creations such as the popular avocado and jalapeño ceviche.
