Playing to the strengths of Venice’s history as a major port, the ingredients list draws upon influences from around the world, but remains rooted in seasonality. Daily fresh produce from the Rialto market and lagoon comprise the delectable dishes – think poached egg with spinach pumpkin fonduta and white truffle, and turbot with Adriatic shellfish and red beet.
