A Hong Kong favourite among chefs

Thanks to its talented culinary director, Richard Ekkebus, two-Michelin-starred Amber offers one of the best dining experiences in Hong Kong. His contemporary French cuisine (with Asian notes), exquisitely plated, is a favourite of numerous legendary chefs when visiting Hong Kong – including Heston Blumenthal, whose most recent visit was late May. Jet-fresh seafood dishes are signatures, such as the absolute must-try Hokkaido Sea Urchin in lobster jelly, with cauliflower, caviar and crispy seaweed waffle. Even sea urchin unbelievers could be converted by this sublime dish. The ambience is luxurious, the service faultless, and the wine list impressive. Not heavily promoted, but a favourite of Hong Kong gourmands and regulars, is the six-course wine-paired lunch served at the weekend. It is only a matter of time before the restaurant is awarded a much-deserved third Michelin star.
