The summary of Conservatorium Hotel's bar menu reads like a roll call of guaranteed crowd-pleasers: “Sushi, Tapas, Champagne, G&T, Cocktails”. Just because the ingredients are tried and tested, however, doesn't mean the resulting mix is predictable. The tasty Asian tapas and sushi are served on a transparent bar, champagne and cocktail lists are extensive, and the signature gin and tonics range from classic to inventive – with more than 50 gins to choose from.
