Celebrity Peruvian chef Gastón Acurio has brought ceviches and tiraditos to Miami at the Mandarin Oriental, his third outpost in the US. In setting that affords attractive views over Biscayne Bay, the menu roams from novo-Andean fare to Asian-Peruvian fusion. Pride of place goes to the dedicated Cebiche and Anticucho bars, which offer 15 different such as Bachiche with scallops, avocado, and garlic-truffle leche de tigre. Pisco-infused cocktails complete an enticing Peruvian experience.
