Inventive odyssey exploring Nordic culinary tradition


Attempting to do for Finnish cuisine what Noma did for Denmark, Olo is a one-star Michelin temple to molecular gastronomy that mixes ancient tradition with futuristic technique in a house with courtyard complete with glass ceiling that dates back to 1817. There’s a genuinely fascinating wine list with handcrafted vinos that aren’t available anywhere else, and the 20-course "The Journey" menu is full of some staggering epicurean twists and turns ranging from radish with oyster leaves to king crab with broccoli and whey to sweetbreads of veal with ox tongue and mushroom.
