Mixologist Grant Collins provides the eclectic tipples in this new perch on the roof of Hyatt Regency Sydney overlooking Darling Harbour. Zephyr – with a nautical-themed open-air space – specialises in globally sourced, barrel-aged vermouth-inspired cocktails and rums, alongside 1950s and 60s vintages. Its hypersonic infuser “barrel ages” the long drinks in seconds, giving this bar an edge in terms of speedy delivery. The drinks will help a gamut of food plates go down; tuck into the juicy pork and herb meatballs, or contemporary nibbles infused with fortified wines.
