Housed in a Spanish-style building that was built for Charlie Chaplin in the 1920s, République makes full use of that space thanks to a refurbishment bringing its rustic aspects to the fore. Husband-and-wife team Walter and Margarita Manzke stick to a sustainable blueprint that has long served them well, and it’s seen in the lengthy menus, from the mushroom mafaldine pasta through to larger dinner dishes including the cook ranch pork chop, belly and sausage. A 103-page wine list – including bottles specifically for Tuesday nights – ensures there’s always an appropriate pairing.
