Marco Stabile, a young Tuscan chef, holds the kitchen reigns, where Tuscan favourites are elevated without ever pulling out their roots. A glassed-in kitchen allows guests to watch the meal preparation, with dish standouts including monk fish breaded in basil and traditional beef tagliata with an anchovy and celery sauce. Extra points: breads are made in-house, from olive oil schiacciata to salty rosemary crackers.
