The jewel in its crown is undoubtedly the two-Michelin-star Sur Mesure par Thierry Marx: an all-white cocoon of a space, designed by Jouin-Manku, creates a blank canvas for the culinary stylings of this avant-garde French master (pictured above), who continually treats diners to unexpected flavours, textures and emotions in dishes like “onion soup, structured and deconstructed” and “veal cooked in three different ways & ‘virtual’ carrots”. To enjoy Marx’s cuisine in a setting that’s a little more décontracté, opt for Camélia, where his fresh, local, sustainable dishes are inspired by Parisian markets and plated on tableware handcrafted by French artisans.

 

Mandarin Oriental Hyde Park, London

 

As the home of the world-famous Dinner by Heston Blumenthal, the culinary credentials of Mandarin Oriental Hyde Park, London are undisputed. The two-Michelin-star restaurant has been celebrated year after year for its fascinating and delightful takes on historic British gastronomy, with an approach that turns the palate into a time machine: cleverly conceived dishes like “Roast Cod & Cockle Ketchup”, “Hay Smoked Salmon” and “Brown Bread Ice Cream” take guests back to the past without ever feeling out of date. And though Blumenthal’s creations cast a long shadow, one shouldn’t give the hotel’s other offerings a miss; The Rosebery, in particular, warrants a visit for its award-winning English Afternoon Tea featuring a selection of 29 different loose-leaf teas paired with all manner of gourmet treats, from dainty sandwiches to fine pastries and oven-fresh scones.

 

Mandarin Oriental Ritz, Madrid

 

Housed in a Belle Époque palace in the city’s Golden Triangle of Art, Mandarin Oriental Ritz, Madrid is so steeped in beauty and high culture that one might accidentally overlook its gastronomic assets – and that would be a mistake. Anointed with two Michelin stars, the hotel’s signature restaurant, Deessa, is the playground of chef Quique Dacosta, whose two tasting menus – “Historical” and “Contemporary” – are served in the exquisitely ornate Alfonso XIII room with views of the tranquil Ritz Garden. A true oasis for the senses right in the heart of the city. Dacosta has also lent his talents to the menu for the hotel's splendid daily Afternoon Tea and its indulgent Sunday Lunch, a true highlight of any weekend in Madrid.

 

Mandarin Oriental, Hong Kong

 

Hong Kong may be synonymous with tea and dim sum, but there is so much more to discover on the city’s monumental dining scene – and its Mandarin Oriental outposts stand especially tall. Among the nine outstanding epicurean offerings at the Mandarin Oriental, Hong Kong, including a patisserie, a Japanese izakaya and a sophisticated British bar and eatery, two carry a Michelin star: Man Wah and the Mandarin Grill + Bar. The Landmark Mandarin Oriental, Hong Kong

 

Poised alongside some of the most expensive real estate in the world, The Landmark Mandarin Oriental, Hong Kong is one of the ritziest, most stylish stays in all of the city, with a culinary repertoire to match. This gourmet mecca has six Michelin stars to its name, spread between three sought-after destinations. Master Chef Masahiro Yoshitake is the force behind one-star Kappo Rin, an intimate eight-seat eatery whose menu is dreamed up daily by the chef and features fine cooked and raw ingredients flown in fresh from top Japanese markets, as well as three-star Sushi Shikon. The only authentic Edo-style sushi experience in Hong Kong, here guests are seated at an eight-person Hinoki counter from which they can watch and engage with the master sushi chefs creating each morsel with painstaking precision. Two-Michelin-star Amber, on the other hand, issues a siren call for diners in search of innovation: drawing on French technique with a contemporary twist, Culinary Director Richard Ekkebus and his team constantly surprise and delight with their modern, sustainable take on haute cuisine.
