Amid the Palace of Versailles’ historic Pavillon Dufour, which has benefited from a minimalist-chic makeover of late courtesy of architect Dominique Perrault, signature dishes such as foie gras with fig chutney and steamed turbot in truffled hollandaise sauce tempt gastronomes away from the city centre at this transformative new outpost from chef Ducasse. House-made pastries, including the decadent La Religieuse – a choux pastry filled with caramel cream and ornamented with gold leaf and caramel icing – is but a glimpse of the delectables served nonstop from the morning through evening.
