Local fare is to the fore at a school hoping to create master chefs


At the recently opened school on Mercato Centrale – in a charming 19th-century edifice recently restored after years of neglect - learning the secrets of top chefs, discovering how to prepare the perfect special occasion meal and experimenting with sublime kitchen instruments are on the curriculum. Supplies come from the surrounding small shops that purvey ingredients embodying the very flavour of Tuscany, while 16 steel work stations with induction hobs and state-of-the-art utensils await those willing to mimic the movements of the instructor and create a culinary masterpiece.
