Chef Alice Waters was eating organic before organic was in and local before Michelle Obama even thought about picking up a spade. As an activist for better nutrition through regionally sourced, pesticide-free fruits and veggies, Waters spearheaded the movement away from 'Frankenfood' and has been literally feeding the philosophy to epicureans for years at her Chez Panisse restaurant in Berkeley, California.

This spring, the Mandarin Oriental in New York City is throwing its weight behind the crusade, letting guests pair warm-weather picnics with the warm feeling that comes from supporting a good cause. When guests order a specially created picnic basket for two, the hotel donates part of the proceeds to Waters' nonprofit organisation Edible Schoolyard, which teaches public school kids about wellness and sustainability.

As the days get longer and more temperate in the Big Apple, there's hardly a finer dining room than Central Park – coincidentally located right outside of the Mandarin Oriental – and guests who would like to take their meals on its lawns and benches can choose from two exclusively designed 'Edible Schoolyard' picnic menus. The Gourmet Picnic, created by Chef Waters, highlights local flavours with casual sophistication in dishes like 'Four Story Hill Grilled Quail with Thyme' and 'Pizza Bianca and Fresh Summer Fruit', whereas the Mandarin Oriental Classic Picnic was designed by the hotel's head chef Toni Robertson, touting an Asian twist in 'Bah Mi Rolls with Roasted Pork' and 'Green Tea Mascarpone Cake with Fresh Berries', among others. The baskets, available to guests through the In-Room Dining Menu or the A La Carte services webpage, come with environmentally friendly tableware and, when possible, ingredients from the region.

A sense of do-good satisfaction is also included, as lunchers can know that their delicious picnic benefits the 1.1 million kids in the New York City school system, who, through hands-on lessons in school gardens and kitchen classrooms, can grow up healthier and more eco-aware.
